My name is Erin, and I work in Business Development at Casting Networks. I’ve been with the company for 2 years and have spent the past year in London to help launch CNI UK! Prior to joining the team at CNI, I could be found bumming around 200 South working in casting, and looking for any excuse to bring my friends in for auditions. I love to cook, especially bake, and am always trying new recipes. A tried and true favorite? My mom’s Oatmeal Chocolate Chip cookies. Everyone loves them and always asks for the recipe, which I rarely give out. (This is mostly so the people who try them will have to keep talking to me if they ever want to eat them again.) Other likes include, but are not limited to, the Toy Story ride at California Adventure, cheese, my best friend’s dog, hats, popcorn at the movies, making my mom uncomfortable, and trips down memory lane. Dislikes include the misuse of your/you’re, tights under denim shorts, and bad tippers.

Oatmeal Chocolate Chip Cookies
Mix together in a large bowl:
3/4 cup Crisco
1/2 cup sugar
1 cup brown sugar
1tsp vanilla
1 egg
1/4 cup water
Sift together into above mixture:
1 cup flour
1tsp salt
1/2 tsp baking soda
To this add:
1 large bag chocolate chips
2 cups oatmeal (Quaker Oats recommended)
1 cup coconut
Bake on an ungreased cookie sheet in a 350-375 degree oven for 10-12 minutes. You can double this recipe for more chocolatey chippy goodness!
