since the beginning. He is now the Senior Vice President of ModelWire, a sister company of Casting Networks. Jeff loves to cook and guacamole is one of his favorite dishes.
Holy Guacamole Batman!
Ingredients:
3/4 tsp Kosher salt
3/4 tsp ground cumin
1/2 tsp cayenne
1/2 tsp chili powder
6 large, ripe avocados
4 Roma tomatoes seeded and diced
1 medium diced white onion
1 jalapeño pepper seeded and minced
3 tablespoons chopped cilantro
2 cloves garlic minced
2 limes juiced
Set aside 1/4 cup of parmesan and the tomatoes. Mix all other ingredients until well blended. Spread into a shallow baking dish. Bake about 20 min. or until bubbling and slightly browned on top. Remove from oven and garnish with reserved parmesan and tomatoes. Serve with plain tortilla chips or wheat crackers.
