Madison Stearns is from a small town in North Carolina. She moved to Los Angeles for school and also currently works as a Customer Service Representative for CNI. When she is not at work, she can usually be found at home with her two cats and a Harry Potter Book. 

Southern Cornbread

1 box of Trader Joe’s Cornbread Mix
1 can of black beans
½ chopped red bell pepper
1-2 cups of shredded Mexican cheese
1 egg
½ cup vegetable oil
¾ cup of milk

How to make it:
Preheat oven to 350 degrees.
Mix, egg, milk, and oil in a bowl.
Mix in the cornbread mixture.
Drain the black beans and add.
Add red bell pepper and cheese.
Stir together.
Grease and 8x8x2 pan with butter or vegetable oil.
Pour ingredients in the pan.
Sprinkle cheese on top.
Cook for 30-35 minutes.
