CNI REcipe of the month

My name is John and I work at CNI in the Casting Director Department.

I’ll admit, I’m not the greatest chef, so when it comes to cooking, I like the minimum input, maximum output approach. Hence, the purchase of a crock pot a few months ago. I love putting in the ingredients, walking away from the kitchen, then returning hours later to a fully cooked meal of deliciousness. Here’s my favorite recipe for the crock pot, which feeds a party of 6:


Salsa Chicken

Ingredients:

6 chicken breatsts
15 ounces black beans
15 ounces kidney beans
1 1/2 cups corn (optional)
1 1/2 cups salsa
1 cup cheddar cheese grated
1 unit rice hot cooked

Instructions:

Combine ingredients in slow cooker, except rice and cheese

Cover, cook on low 6-8 hours, or high 4-5 hours

Spend entire day not worrying about cooking.

Serve over rice and top with cheese. Enjoy satisfaction of creating awesome meal with very little effort. 🙂
